1. Sunshine Corn Flakes Crumbs Double Coated Chicken

Ingredients

• 1 3/4 cups of Sunshine Corn Flakes Crumbs
• 1 egg
• 1 cup of milk
• 1 cup regular all purpose flour
• 1 1/2 teaspoon salt,
• 1/4 teaspoon pepper
• 3 lbs frying chicken pieces-washed and patted dry
• 3 tablespoon regular margarine or butter-melted
• Spread Corn Flakes Crumbs in a shallow dish for coating- set aside.

Directions

In small mixing bowl beat egg and milk slightly. Add flour, salt and pepper. Mix until smooth. Dip chicken in batter then coat with Crumbs. Place in single layer, skin side up, in a well greased or foiled lined baking dish. Drizzle with melted margarine. Bake in oven at 350 degrees for about 1 hour or until chicken is tender. Do not cover or turn chicken while baking.

2. Sunshine Apricot Bran Bread

Ingredients

• 1 1/4 cups boiling water
• 1 1/2 cups cut dry apricots
• 1 1/2 cups Sunshine Raisin Oat Bran Flakes.
• 2 tablespoon shortening
•  1 egg, slightly beaten
• 1 teaspoon vanilla
• 1 1/2 cups sifted flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1 teaspoon soda
• 1 teaspoon salt
• 3/4 cup sugar
• 3/4 cup chopped walnuts

Directions

In large mixing bowl, pour boiling water over apricots, add Sunshine Raisin Oat Bran Flakes and shortening, let cool. 

Stir  egg and vanilla. In a medium bowl, stir together flour, baking powder, baking soda, salt, sugar and mix with walnuts. Add to cereal mixture, stirring only combined. Spread in a greased 9 1/2 * 5 1/4 inch loaf pan. Bake at 350 degrees for about 50 minutes. Cool completely before slicing.
